The digital wallet to buy drinks sounds like a good idea. But what about food? Will I be able to purchase a sandwhich or a cup of java with my trusty Mastercard?

Or will I need to bring cash and (god forbid) stand in line at an ATM machine if I run low.

That is a question for the stall operators. As with the market stalls, they are not under the direct control of BF. Most would prefer cash. This is because they are likely to be using mobile EFT machines or similar payment systems that have higher overheads. And since the transactions are likely to be small, the per-transaction fees will eat into margins.

My observation from 7 hours at Bluesfest yesterday is that the food and non alcoholic drinks transactions are almost exclusively cash. And this makes perfect sense for the reasons put forward by mpember. So my suggestion is to bring enough cash for all your food and drinks purchases. And if possible have some smaller denomination notes and $1 and $2 coins for purchases such as the $12 noodles and $4 coffees. Having the correct change or close to it to pay for such small purchases certainly helps the queues move faster than paying with a $50 note.
